Method
Make the simple syrup
- In a medium saucepan combine the brown sugar, water, molasses, ground ginger, cinnamon, and vanilla extract. Place over medium heat and stir until combined. Bring the syrup to a slow boil before reducing the heat to low and simmering for about 5 minutes, stirring occasionally. Remove from the heat and allow to cool slightly before pouring into a glass jar with a lid and storing in the refrigerator. Syrup keeps in the fridge for up to 2 weeks.
Make the Latte
- Keep in mind that this serves one, but you can easily double the latte ingredients. If you would like more or less coffee, syrup, or milk, read the above paragraph about customizations before you begin.
- Pour the milk into a microwaveable liquid measuring cup. Microwave for about 1 minute to steam. Shake the gingerbread syrup in it's jar before adding about 1 Tablespoon (or more to your liking). Combine using a milk frother or whisk. I like to use a frother so you get a layer of foam.
- Pour your desired amount of coffee into a mug (I always do a little over ½ a cup). Pour the frothed gingerbread milk over top. Top with any desired toppings, and enjoy!
Notes
Coffee: You can customize how much coffee you add to your liking. Or if you don't like coffee, you can replace it with strong brewed black tea or chai.
